A Greek Sesame Seed Bread

Koulouri Recipe

If you can’t make it to Greece but want to experience the flavours of Koulouri, you can try making it at home. Here’s an authentic recipe.

Yields:  12-15 koulouri  Prep time:  20 minutes  Rising time:  1 hour  Cooking time:  15-20 minutes

Ingredients

 

For the dough:

  • 1 cup (250 ml) warm water
  • 1 tablespoon active dry yeast
  • 1 teaspoon sugar
  • 1/4 cup (50 ml) olive oil
  • 3 cups (375 grams) all-purpose flour
  • 1 teaspoon salt


For the sesame seed coating:


  • 1/2 cup (125 grams) sesame seeds

Method

  • Make the dough: In a small bowl, combine the warm water, yeast, and sugar. Let stand for 5 minutes, or until the yeast is foamy.

  • In a large bowl, whisk together the olive oil, flour, and salt.

  • Add the yeast mixture to the dry ingredients and stir until a dough forms.

  • Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.

  • Place the dough in a greased bowl, cover with plastic wrap, and let rise in a warm place for about 1 hour, or until doubled in size.

  •  Punch down the dough and divide it into 12-15 equal pieces. Roll each piece into a long, thin rope.  
  • Shape the ropes into circles or knots.

  • In a small bowl, put in the sesame seeds.

  • Dip the shaped dough into the sesame seeds, coating evenly.

  • Preheat oven to 375°F (190°C).

  • Place the Koulouri on a baking sheet lined with parchment paper.

  • Bake for 15-20 minutes, or until golden brown.

  • Let cool slightly before serving.
