Loimulohi is a traditional Finnish dish featuring salmon that is cooked over an open fire or grill. The fish is typically marinated in a simple brine or marinade before cooking, resulting in a tender and tasty dish.

Yields:  6-8 servings  Prep time: 30 minutes  Cooking time:  45-50 minutes

Ingredients


For the marinade:

  • 1 cup (250 ml) water
  • 1/4 cup (60 ml) lemon juice
  • 1 tablespoon sugar
  • 1 teaspoon salt

For the loimulohi:

  • 1 pound (500 grams) salmon fillet
  • 1/4 cup (60 ml) olive oil
  • 1/4 cup (50 grams) fresh dill, chopped

 

Method

 

  • Make the marinade: In a small bowl, combine the water, lemon juice, sugar, and salt.

  • Marinate the salmon: Place the salmon fillet in a shallow dish and pour the marinade over it. Cover and refrigerate for at least 30 minutes, or overnight.

  • Prepare the grill: Preheat a grill to medium-high heat.

  • Cook the salmon: Remove the salmon from the marinade and pat dry with paper towels. Brush the salmon with olive oil and sprinkle with dill.

  • Grill the salmon: Place the salmon on the grill, skin-side down, and cook for 10-15 minutes, or until cooked through.

  • Serve: Serve the loimulohi hot, with a side of potatoes or vegetables.
