Tullumba is a popular Albanian dessert consisting of small, fried dough balls soaked in a sweet syrup. They are often topped with chopped nuts or sesame seeds.

Yields: 20-25 tullumba  Prep time:  20 minutes  Rising time:  1 hour  Cooking time:  2-3 minutes per batch

Ingredients

 

For the dough:

  • 1 cup (250 ml) warm water
  • 1 tablespoon active dry yeast
  • 1 teaspoon sugar
  • 1/4 cup (50 ml) olive oil
  • 2 cups (250 grams) all-purpose flour
  • 1/2 teaspoon salt

For the syrup:

  • 1 cup (250 ml) water
  • 1 cup (250 grams) sugar
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon vanilla extract

For the topping:

  • 1/2 cup (125 grams) chopped walnuts or pistachios
  • 1/4 cup (50 grams) ground cinnamon

Method

 

  • Make the dough: In a small bowl, combine the warm water, yeast, and sugar. Let stand for 5 minutes, or until the yeast is foamy.

  • In a large bowl, whisk together the olive oil, flour, and salt.

  • Add the yeast mixture to the dry ingredients and stir until a dough forms.

  • Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.

  • Place the dough in a greased bowl, cover with plastic wrap, and let rise in a warm place for about 1 hour, or until doubled in size. 

  • Punch down the dough and divide it into small pieces, about the size of a walnut. 

  • Heat about 1 inch of oil in a deep fryer or large pot to 350°F (175°C).

  • Fry the dough balls in batches for 2-3 minutes per side, or until golden brown.

  • Remove the tullumba from the oil and drain on paper towels.

  • Make the syrup: In a small saucepan, combine the water, sugar, lemon juice, and vanilla extract. Bring to a simmer and cook for 5-10 minutes, or until the syrup thickens.

  • Soak the tullumba: Dip the warm tullumba into the syrup and let them soak for a few minutes.

  • Top with nuts and cinnamon: Roll the soaked tullumba in a mixture of chopped nuts and cinnamon.
