Masala chai is a popular Indian spiced tea made with black tea, milk and a blend of aromatic spices. It’s a comforting and tasty drink that’s perfect for any time of day.


Yields:  2 servings  Prep time:  5 minutes  Brewing time:  5-7 minutes

Ingredients


For the chai masala spice blend:

  • 1 tablespoon ground cardamom pods
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground nutmeg


For the chai:

  • 1 teaspoon black tea leaves
  • 1 cup (250 ml) water
  • 1 cup (250 ml) milk
  • 1/4 cup (60 ml) sugar (adjust to taste)

 

Method



  • Make the chai masala: Combine the cardamom pods, cloves, cinnamon, ginger, black pepper, and nutmeg in a small spice grinder or mortar and pestle. Grind until finely powdered.

  • Brew the tea: In a saucepan, bring the water to a boil. Add the black tea leaves and chai masala spice blend. Reduce heat and simmer for 5-7 minutes, or until the tea is brewed to your desired strength.

  • Add milk and sugar: Add the milk and sugar to the saucepan. Stir to combine.

  • Heat and serve: Heat the chai mixture over medium heat until the milk is hot but not boiling. Serve immediately.
