Guava Duff Bahamian street food Recipe

Guava duff is a traditional Bahamian dessert made with guava, flour, sugar and spices. It’s often served with vanilla sauce or whipped cream.

Yields:  8-10 servings  Prep time:  30 minutes  Cooking time:  30-35 minutes

Ingredients

 

For the dough:

  • 2 cups (250 grams) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (125 ml) unsalted butter, softened
  • 1/2 cup (125 grams) granulated sugar
  • 1 egg
  • 1/4 cup (60 ml) milk


For the filling:

  • 2 cups (500 grams) guava puree
  • 1/4 cup (60 grams) granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon

Method

 

  • Make the dough: In a large bowl, whisk together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the sugar, egg, and milk until just combined. 

  • Make the filling: In a small bowl, combine the guava puree, sugar, lemon juice, and cinnamon.

  • Assemble the duff: Roll out the dough on a lightly floured surface to a 12-inch circle. Spread the guava filling evenly over the dough. Roll up the dough tightly.

  • Cut into slices: Cut the rolled dough into 8-10 slices.

  • Bake: Bake in a preheated oven at 375°F (190°C) for 30-35 minutes, or until golden brown.

  • Serve: Serve warm with vanilla sauce or whipped cream.
