A Comforting Cambodian Rice Porridge

Bor Bor is a comforting Cambodian rice porridge, often enjoyed for breakfast or as a light meal. It’s simple to prepare and can be customized with various toppings and ingredients.  

Yields:  4-6 servings  Prep time:  15 minutes  Cook time:  1-2 hours

Ingredients


  • 1 cup (250 ml) jasmine rice
  • 6 cups (1.5 liters) water
  • 1 teaspoon salt
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1/2 pound (250 grams) boneless, skinless chicken breast, shredded
  • 1/2 cup (125 ml) chopped green onions  
  • 1/4 cup (60 ml) chopped cilantro
  • Fried shallots (optional)
  • Fried garlic (optional)

 

Method


  • Rinse the rice: Rinse the rice thoroughly under cold water until the water runs clear.

  • Cook the rice: In a large pot, combine the rice, water, salt, and fish sauce. Bring to a boil, then reduce heat to low and simmer for 1-2 hours, or until the rice is soft and creamy. Stir occasionally to prevent sticking.

  • Add the chicken and seasonings: Add the shredded chicken, sugar, green onions, and cilantro to the porridge. Stir to combine.

  • Serve: Serve the porridge hot, garnished with fried shallots and fried garlic, if desired.
