Foul Mesdames Recipe egyptian street food

Foul Medames is a popular Egyptian breakfast dish made from fava beans. It’s typically served with warm pita bread and a variety of toppings.

Yields:  4-6 servings  Prep time:  30 minutes  Cook time:  1-2 hours

Ingredients


  • 1 pound (500 grams) dried fava beans, soaked overnight and drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon coriander seeds
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 cup (60 ml) olive oil
  • Lemon wedges
  • Fresh cilantro, chopped

 

Method


  • Cook the fava beans: In a large pot, combine the fava beans with enough water to cover. Bring to a boil, then reduce heat and simmer for 1-2 hours, or until the beans are tender. Drain.

  • Sauté the onions and garlic: Heat olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until softened.

  • Combine the ingredients: Add the cooked fava beans to the skillet with the onions and garlic. Mash the beans slightly with a potato masher or the back of a spoon.

  • Season and serve: Season the fava beans with cumin, coriander, cayenne pepper, black pepper, and salt. Serve hot with warm pita bread, lemon wedges, and fresh cilantro.
