A Sweet and Nutty Egyptian Delight

Basbousa is a popular Egyptian dessert made with semolina, sugar, and butter. It’s often topped with nuts and a sweet syrup.

Yields:  8-10 servings  Prep time:  20 minutes  Cook time:  30-35 minutes

Ingredients


For the semolina mixture:

  • 1 cup (250 grams) semolina flour
  • 1 cup (250 grams) granulated sugar
  • 1 teaspoon baking powder
  • 1/2 cup (125 ml) unsalted butter, melted
  • 1 cup (250 ml) milk
  • 1 teaspoon vanilla extract


For the syrup:

  • 1 cup (250 ml) sugar
  • 1 cup (250 ml) water
  • 1/4 cup (60 ml) lemon juice

For topping:

  • Chopped pistachios or almonds

 

Method


  • Prepare the semolina mixture: In a large bowl, combine the semolina flour, sugar, and baking powder. Add the melted butter, milk, and vanilla extract. Mix well until a smooth batter forms.

  • Pour the batter: Pour the batter into a greased baking dish.

  • Bake the basbousa: Bake in a preheated oven at 350°F (175°C) for 30-35 minutes, or until golden brown.

  • Make the syrup: In a saucepan, combine the sugar, water, and lemon juice. Bring to a boil, then reduce heat and simmer for 5-10 minutes, or until the syrup thickens.

  • Soak the basbousa: Pour the hot syrup over the hot basbousa.

  • Top and serve: Top with chopped pistachios or almonds and serve warm or cold.
