Anticuchos are a popular Peruvian street food consisting of skewered grilled beef heart. They’re marinated in a aromatic mixture of spices and often served with a side of potatoes.

Ingredients


  • 1 pound (500 grams) beef heart, cut into 1-inch cubes
  • 1/4 cup (60 ml) soy sauce
  • 1/4 cup (60 ml) lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste

Method

 

  • Marinate the beef heart: In a bowl, combine the beef heart, soy sauce, lime juice, garlic, cumin, paprika, red pepper flakes, salt, and pepper. Marinate for at least 30 minutes, or preferably overnight.

  • Thread the beef heart: Thread the marinated beef heart onto wooden skewers.

  • Grill the anticuchos: Grill the skewers over high heat for 2-3 minutes per side, or until cooked through and slightly charred.

  • Serve: Serve the anticuchos hot with a side of potatoes or a green salad.
