Papa Rellena, or stuffed potato, is a popular Peruvian dish. It’s a deep-fried potato filled with a savoury meat mixture.

Ingredients

For the potatoes:
  • 4 large potatoes
  • Salt to taste

 

For the filling:

  • 1 pound (500 grams) ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup (125 ml) green peas
  • 1/4 cup (60 ml) chopped olives
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste

For the coating:

  • 1 cup (125 grams) all-purpose flour
  • 1 egg, beaten
  • Breadcrumbs

For frying:

  • Vegetable oil, for frying

Method


  • Boil the potatoes: Boil the potatoes in salted water until tender. Peel and mash them.

  • Prepare the filling: In a large skillet, cook the ground beef, onion, and garlic until the meat is browned and the onions are softened. Add the green peas, olives, cumin, paprika, red pepper flakes, salt, and pepper. Cook for a few more minutes, then remove from heat.

  • Assemble the papa rellena: Divide the mashed potatoes into 4 equal portions. Flatten each portion into a disk. Place a spoonful of the meat filling in the center of each potato disk. Bring the edges of the potato together to enclose the filling, forming a ball.

  • Coat the papa rellena: Dredge the potato balls in flour, then dip them in the beaten egg, and finally coat them in breadcrumbs.

  • Fry the papa rellena: Heat the oil in a deep fryer or large pot to 350°F (175°C). Fry the papa rellena in batches until golden brown and crispy.

  • Serve: Drain the fried papa rellena on paper towels and serve hot.
