Salchipapas is a popular Peruvian street food combining crispy French fries with savoury sausages.

Ingredients


  • 2 large potatoes, peeled and cut into French fry shapes
  • 4-6 sausages (such as hot dogs or chorizo), sliced
  • Vegetable oil for frying
  • Salt and pepper to taste
  • Ketchup
  • Mayonnaise
  • Aji amarillo paste (optional)

Method

 

  • Prepare the potatoes: Peel and cut the potatoes into French fry shapes.

  • Fry the potatoes: Heat the oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy. Drain on paper towels.

  • Cook the sausages: While the potatoes are frying, cook the sausages in a separate pan until browned.

  • Combine and serve: Combine the hot fries and sausages in a bowl. Season with salt and pepper. Serve immediately with ketchup, mayonnaise, and aji amarillo paste (if using).
