Kalua Pig: A Hawaiian Barbecue Classic

Kalua pig is a traditional Hawaiian dish that involves slow-roasting a whole pig in an underground oven, or imu. While this traditional method requires specific equipment and expertise, we can achieve similar results using a slow cooker or oven.  

 

Yields:  6-8 servings  Prep time:  15 minutes  Cook time:  8-10 hours (slow cooker) or 4-6 hours (oven)

Ingredients

  • 1 pound (454 grams) poi  
  • 1 cup (250 grams) mochiko flour
  • 1/2 cup (125 grams) sugar
  • 1/2 cup (125 ml) water
  • Vegetable oil, for frying

 

Method

 

  1. Prepare the pork: Score the pork shoulder with a knife, then rub it with salt and liquid smoke. 

  2. Slow Cooker Method: Place the pork in a slow cooker. Add the water. Cook on low for 8-10 hours, or on high for 4-6 hours.

  3. Oven Method: Wrap the pork in banana leaves or aluminum foil. Place it in a roasting pan and bake in a preheated oven at 300°F (150°C) for 4-6 hours, or until the meat is tender and falls apart. 

  4. Shred the pork: Once cooked, shred the pork using two forks.
  5. Serve: Serve the Kalua pig with rice, poi, or in a Hawaiian plate lunch.
