A Tangy and Refreshing Indian Snack

Dahi bhalla indian street food recipe.

Dahi Bhalla is a popular Indian street food that features crispy fried lentil dumplings soaked in a tangy yogurt sauce. It’s often garnished with sweet and savoury chutneys.

Yields:  4-6 servings  Prep time:  30 minutes  Cook time:  20-25 minutes

Ingredients


For the Bhalla:

  • 1 cup (250 grams) urad dal (black gram), soaked overnight and drained
  • 1 teaspoon baking soda
  • Salt to taste
  • Oil for frying


For the Yogurt Mixture:

  • 2 cups (500 ml) yogurt, whisked smooth
  • 1 teaspoon cumin powder
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon black pepper
  • Salt to taste
  • Water, as needed

For the Sweet and Sour Sauce:

  • 1/2 cup (125 ml) tamarind pulp
  • 1/4 cup (60 ml) jaggery or brown sugar
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon red chili powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon asafoetida
  • Water, as needed

 

 

Method


  • Make the Bhalla: Grind the soaked urad dal into a smooth batter. Add baking soda and salt. Heat oil in a deep fryer or kadai. Drop spoonfuls of batter into the hot oil and fry until golden brown and crispy. Drain on paper towels.

  • Prepare the Yogurt Mixture: In a bowl, whisk the yogurt, cumin powder, red chili powder, black pepper, and salt. Add water to adjust the consistency.

  • Make the Sweet and Sour Sauce: In a saucepan, combine the tamarind pulp, jaggery, cumin powder, red chili powder, black pepper, and asafoetida. Add water to adjust the consistency. Bring to a boil, then simmer until the sauce thickens.

  • Assemble the Dish: Soak the fried bhalla in the yogurt mixture for a few minutes. Serve the soaked bhalla with the sweet and sour sauce. Garnish with chopped coriander leaves and sev.
