Ghewar is a traditional Indian sweet, particularly popular in Rajasthan. It’s a delicate, honeycomb-like dessert, often soaked in a sweet syrup and garnished with nuts.

Ingredients

 

For the Ghewar:

  • 1 cup (250 grams) all-purpose flour
  • 1/2 cup (125 grams) ghee, melted
  • 1/4 cup (60 ml) milk
  • 1/2 cup (125 ml) water
  • A few drops of yellow food colour (optional)
  • Ghee for frying

For the sugar syrup:

  • 1 cup (250 grams) sugar
  • 1 cup (250 ml) water
  • 1 teaspoon cardamom powder
  • A few drops of rose water


Method

 

  • Make the Ghewar batter: In a bowl, combine the flour, ghee, milk, and water. Mix well to form a smooth batter. Add a few drops of yellow food colour, if desired.

  • Fry the Ghewar: Heat ghee in a deep skillet or kadai. Pour a ladleful of batter into the hot ghee, allowing it to spread and form a circular shape. Fry until golden brown and crispy. Repeat with the remaining batter.

  • Make the sugar syrup: In a saucepan, combine sugar and water. Boil until the syrup reaches a one-string consistency. Add cardamom powder and rose water.

  • Soak the Ghewar: Soak the fried Ghewar in the warm sugar syrup.

  • Serve: Serve the Ghewar warm or cold, garnished with nuts and silver leaf.
