Chilaquiles: A Savoury Mexican Breakfast

Chilaquiles are a delicious and versatile Mexican dish made with crispy tortilla chips simmered in salsa. They are often enjoyed for breakfast or brunch.

 

Yields:  4 servings  Prep time:  15 minutes  Cook time:  15-20 minutes

 

Ingredients

  • 10 corn tortillas, cut into strips
  • 2 cups (500ml) salsa verde (or your favorite salsa)
  • 1/4 cup (60ml) chopped onion
  • 1/4 cup (60ml) chopped cilantro
  • 1/4 cup (60ml) crumbled queso fresco or cotija cheese
  • 1/4 cup (60ml) sour cream
  • 2 large eggs, fried (optional)
  • Avocado, sliced (optional)
  • 1/4 cup (60ml) chopped radishes (optional)
  • 1/4 cup (60ml) chopped jalapeños (optional)

 

Method


  • Fry the Tortillas: Heat about 1 inch (2.5 cm) of oil in a large skillet over medium heat. Fry the tortilla strips in batches until golden brown and crisp. Remove from the oil and drain on paper towels.

  • Simmer the Tortillas: In the same skillet, heat the salsa over medium heat. Add the fried tortilla strips to the salsa and simmer for 5-10 minutes, or until the tortillas are softened and well coated in the salsa.
  • Assemble and Serve: Divide the chilaquiles among bowls. Top with chopped onion, cilantro, queso fresco, sour cream, fried eggs (if using), avocado, radishes, and jalapeños (if using).

 

Tips:
  • Use any type of salsa you prefer, such as salsa verde, salsa roja, or even a smoky chipotle salsa.

  • Add other toppings to your liking, such as beans, shredded chicken, or crumbled chorizo.

  • For a vegetarian option, omit the eggs and add extra vegetables like mushrooms or spinach.

  • Serve with a side of rice or beans for a more substantial meal.
