Souvlaki recipe

If you’re craving the flavors of Greece but can’t make it there just yet, Souvlaki is easy to make at home. Here’s a simple recipe for classic Souvlaki

Yields:  2 servings  Prep time:  30 minutes Marinating time:  At least 30 minutes, or overnight Cooking time: 10-12 minutes

Ingredients


For the marinade:

  • 1/2 cup (125 ml) olive oil
  • 1/4 cup (60 ml) red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the Souvlaki:

  • 1 pound (500 grams) pork, chicken, or lamb, cut into 1-inch cubes
  • 1 pita bread, sliced in half
  • 1/2 cup (125 grams) Greek yogurt
  • 1 cucumber, finely chopped
  • 1 clove garlic, minced
  • 1/4 cup (60 ml) fresh dill, chopped
  • 1/2 cup (125 grams) red onion, thinly sliced
  • 1/2 cup (125 grams) cherry tomatoes, halved

Method


  • Make the marinade: In a large bowl, combine the olive oil, red wine vinegar, garlic, oregano, thyme, salt, and pepper.

  • Marinate the meat: Add the meat to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or overnight.

  • Grill the meat: Preheat a grill to medium-high heat. Thread the marinated meat onto skewers. Grill for 10-12 minutes, or until cooked through.

  • Make the tzatziki sauce: In a small bowl, combine the Greek yogurt, cucumber, garlic, dill. Stir to combine.

  • Assemble the souvlaki: Place the grilled meat on the pita bread. Top with tzatziki sauce, red onion, and cherry tomatoes.
