Ingredients:

For the marinade:

  • 1 cup (250 ml) white wine
  • 1/4 cup (60 ml) olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Bifana:

  • 1 pound (500 grams) pork loin, thinly sliced
  • 4 soft rolls

Method

  1. Make the marinade: In a large bowl, combine the white wine, olive oil, garlic, paprika, salt, and pepper.

  2. Marinate the pork: Add the thinly sliced pork loin to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 2 hours or overnight.

  3. Cook the pork: Heat a skillet or grill over medium-high heat. Remove the pork from the marinade and discard the excess liquid. Cook the pork for 10-15 minutes, or until it is browned and cooked through.

  4. Assemble the Bifana: Place the cooked pork on the soft rolls. Serve immediately.

Optional: For a more authentic experience, serve the Bifana with a side of fries or a Portuguese piri piri sauce.
