Bun Shawarma is a popular Egyptian street food that features thinly sliced marinated meat, typically lamb or beef, served in a warm bun with various toppings.

Yields:  4-6 servings  Prep time:  30 minutes  Cook time:  20-30 minutes

Ingredients

 

For the meat:

  • 1.5 pounds (750 grams) flank steak or shoulder lamb
  • 1/2 cup (125 ml) plain yogurt
  • 1/4 cup (60 ml) lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


For the toppings:

  • Pita bread
  • Lettuce
  • Tomato
  • Onion
  • Tahini sauce


Method

 

  • Marinate the meat: In a bowl, combine the meat, yogurt, lemon juice, olive oil, cumin, coriander, red pepper flakes, salt, and pepper. Marinate for at least 2 hours, or preferably overnight.

  • Cook the meat: Grill or broil the marinated meat until cooked through and slightly charred. Let it rest for a few minutes, then thinly slice it.

  • Assemble the shawarma: Warm the pita bread. Place a generous amount of sliced meat inside the pita. Top with lettuce, tomato, and onion. Drizzle with tahini sauce.
