Byrek is a traditional Albanian pastry that’s filled with savoury or sweet ingredients. It’s a popular dish that can be enjoyed for breakfast, lunch, or dinner.

Yields:  8-10 servings  Prep time:  30 minutes  Baking time:  30-35 minutes

Ingredients

 

For the pastry:

  • 2 cups (250 grams) all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup (125 grams) unsalted butter, cold and cubed
  • 1/4 cup (60 ml) cold water

For the filling:

  • 1 pound (500 grams) spinach, chopped
  • 1/2 cup (125 grams) feta cheese, crumbled
  • 1/4 cup (60 ml) chopped onions
  • 1 egg, beaten
  • 1/4 cup (60 ml) chopped fresh dill
  • Salt and pepper to taste

Method


  • Make the pastry: In a large bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add the water, mixing until the dough just comes together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

  • Make the filling: In a large bowl, combine the spinach, feta cheese, onions, egg, dill, salt, and pepper.

  • Roll out the pastry: Roll out the pastry on a lightly floured surface to a 12-inch circle.

  • Add the filling: Spread the spinach mixture evenly over the pastry.

  • Bake: Bake in a preheated oven at 375°F (190°C) for 30-35 minutes, or until golden brown and flaky.
