Yields:  4 servings  Prep time:  15 minutes  Cook time:  15-30 minutes (marinating)

Ingredients

 

  • 1 pound (450g) firm white fish (such as sea bass, halibut, or cod), cut into 1-inch cubes
  • 1 cup (250ml) fresh lime juice
  • 1/4 cup (60ml) red onion, thinly sliced
  • 1/4 cup (60ml) chopped cilantro
  • 2 jalapeños, minced (adjust to taste)
  • 1/4 cup (60ml) olive oil
  • Salt and pepper to taste
  • Corn kernels (optional)
  • Sweet potato, boiled and cubed (optional)

Method


  1. Prepare the Fish: Cut the fish into 1-inch cubes.

  2. Marinate the Fish: In a non-reactive bowl, combine the fish cubes with lime juice. Cover and refrigerate for 15-30 minutes, or until the fish is opaque and cooked through.

  3. Combine Ingredients: In a separate bowl, combine the marinated fish, red onion, cilantro, jalapeños, olive oil, salt, and pepper.

  4. Serve: Serve immediately, or refrigerate for up to 2 hours. Garnish with corn kernels and/or sweet potato cubes, if desired.


Tips:

  • Use the freshest seafood possible.

  • Adjust the amount of lime juice and jalapeños to your taste.

  • Let the ceviche marinate for at least 15 minutes, but avoid over-marinating, as the fish can become mushy.

  • Serve chilled.
