Chicken souse is a tasty Bahamian Broth /Stew that’s often enjoyed for breakfast or lunch. It’s made with a rich broth, vegetables, and tender chicken.

Yields:  4-6 servings  Prep time:  30 minutes Cook time:  1-2 hours

Ingredients


  • 1 pound (500 grams) chicken, cut into pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 carrot, chopped
  • 1 tablespoon olive oil
  • 1 can (15 ounces/425 grams) diced tomatoes
  • 1 cup (250 ml) chicken broth
  • 1/2 cup (125 ml) water
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • 1/2 cup (125 grams) dumplings (optional)

 

Method


  • Sauté the vegetables: Heat olive oil in a large pot over medium heat. Add the onion, bell pepper, and garlic, and cook until softened.

  • Add the chicken and liquids: Add the chicken, diced tomatoes, chicken broth, water, thyme, black pepper, and cayenne pepper to the pot. Bring to a boil, then reduce heat and simmer for 1-2 hours, or until the chicken is tender.

  • Add dumplings (optional): If desired, drop dumplings into the soup and cook for 10-15 minutes, or until cooked through.

  • Season to taste: Season with salt to taste.

  • Serve: Serve hot with crusty bread or crackers.
