A Classic Egyptian Dish

Falafel is a popular Egyptian dish made from fava beans. They are deep-fried until crispy on the outside and soft on the inside.

Yields:  20-25 falafel balls  Prep time:  30 minutes  Cook time:  10-12 minutes

Ingredients


  • 1 cup (250 grams) dried fava beans, soaked overnight and drained
  • 1/4 cup (60 ml) fresh parsley, chopped
  • 1/4 cup (60 ml) fresh cilantro, chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • Salt to taste
  • Oil for frying

 

Note: If fava beans are unavailable, you can substitute them with chickpeas. However, the colour and texture of the falafel will differ slightly.

 

Method


  • Process the fava beans: In a food processor, combine the soaked fava beans, parsley, cilantro, onion, garlic, cumin, coriander, red pepper flakes, baking powder, baking soda, and salt. Process until a coarse paste forms.


  • Shape the falafel: Use your hands to shape the mixture into small balls.


  • Fry the falafel: Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the falafel balls in batches until golden brown and crispy.


  • Drain and serve: Drain the falafel on paper towels and serve immediately with pita bread, hummus, tahini sauce, and your favourite toppings.
