Bahamian fire engine recipe

Fire Engine is a popular Bahamian dish made with steamed corned beef, vegetables, and a savory tomato-based sauce. It’s often served over rice or grits.


Yields:  4-6 servings  Prep time:  30 minutes Cooking time:  25-30 minutes

Ingredients

 

For the Fire Engine:

  • 1 pound (500 grams) corned beef, cooked and shredded
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces/425 grams) diced tomatoes
  • 1 cup (250 ml) chicken broth
  • 1/4 cup (60 ml) white wine
  • 1 tablespoon brown sugar
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste

For serving:

  • Rice or grits

 

Method


  • Sauté the vegetables: Heat olive oil in a large skillet over medium heat. Add the onion, bell pepper, and garlic, and cook until softened.

  • Add the corned beef: Add the shredded corned beef to the skillet and cook for 5-7 minutes, or until heated through.

  • Add the sauce ingredients: Stir in the diced tomatoes, chicken broth, white wine, brown sugar, thyme, cayenne pepper, salt, and pepper. Bring to a simmer and cook for 15-20 minutes, or until the sauce thickens.

  • Serve: Serve the Fire Engine over rice or grits.
