A Maltese Bread Delight

Gozitan ftira recipe

Gozitan Ftira is a traditional Maltese bread topped with tomato sauce, olives, anchovies, and herbs. Otherwise known as Gozo Pizza, it’s a tasty dish that’s perfect for a picnic or a light meal.

Yields:  2 large or 4 small Prep time: 30 minutes  Rising time:  1 hour  Baking time:  20-25 minutes

Ingredients


For the dough:

  • 1 cup (250 ml) warm water
  • 1 tablespoon active dry yeast
  • 1 teaspoon sugar
  • 1/4 cup (50 ml) olive oil
  • 3 cups (375 grams) all-purpose flour
  • 1 teaspoon salt

For the topping:

  • 1/2 cup (125 ml) tomato sauce
  • 1/4 cup (60 ml) olive oil
  • 1/4 cup (50 grams) pitted olives, sliced
  • 1/4 cup (60 ml) capers, drained
  • 1/4 cup (50 grams) anchovies, chopped
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Method

 

For the dough:

  • Make the dough: In a small bowl, combine the warm water, yeast, and sugar. Let stand for 5 minutes, or until the yeast is foamy.

  • In a large bowl, whisk together the olive oil, flour, and salt.

  • Add the yeast mixture to the dry ingredients and stir until a dough forms.

     

  • Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.

     

  • Place the dough in a greased bowl, cover with plastic wrap, and let rise in a warm place for about 1 hour, or until doubled in size.

     

  •  Punch down the dough and divide it into 2 or 4 equal pieces. Roll each piece into a large oval shape.
  • Place the dough on a baking sheet lined with parchment paper.

  • Make a well in the center of each dough oval.

  • Make the topping: In a small bowl, combine the tomato sauce, olive oil, olives, capers, anchovies, oregano, thyme, salt, and pepper.

  • Pour the topping into the wells in the dough.

  • Bake in a preheated oven at 400°F (200°C) for 20-25 minutes, or until the dough is golden brown and the topping is bubbly.
