A Greek Street Food Staple

Greek gyros recipe

If you can’t make it to Greece but want to experience the flavours of Gyros, you can try making it at home.

Yields:  2 servings  Prep time:  30 minutes  Marinating time:  At least 30 minutes, or overnight  Cooking time: 10-12 minutes

Ingredients

 

For the marinade:

  • 1/2 cup (125 ml) olive oil
  • 1/4 cup (60 ml) red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


For the gyros:

  • 1 pound (500 grams) lamb or pork, thinly sliced
  • 1 pita bread, sliced in half
  • 1/2 cup (125 grams) Greek yogurt
  • 1 cucumber, finely chopped
  • 1 clove garlic, minced
  • 1/4 cup (60 ml) fresh dill, chopped
  • 1/2 cup (125 grams) red onion, thinly sliced
  • 1/2 cup (125 grams) cherry tomatoes, halved

Method


  • Make the marinade: In a large bowl, combine the olive oil, red wine vinegar, garlic, oregano, thyme, salt, and pepper.

  • Marinate the meat: Add the thinly sliced meat to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or overnight.

  • Cook the meat: Cook the marinated meat on a vertical rotisserie or grill until cooked through and slightly charred.

  • Make the tzatziki sauce: In a small bowl, combine the Greek yogurt, cucumber, garlic, dill. Stir to combine.

  • Assemble the gyros: Place the grilled meat on the pita bread. Top with tzatziki sauce, red onion, and cherry tomatoes.
