A Maltese Pastry Delight

Imqaret street food recipe

Imqaret are traditional Maltese pastries filled with a sweet date paste. They are typically deep-fried and coated in sugar or cinnamon.

Yields:  12-15 imqaret Prep time:  30 minutes  Baking time:  15-20 minutes

Ingredients

 

For the pastry:
  • 1 cup (250 ml) all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (125 grams) unsalted butter, cold and cubed
  • 2-3 tablespoons cold water


For the filling:

  • 1 cup (250 grams) pitted dates
  • 1/4 cup (60 ml) water
  • 1 tablespoon honey
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves

Method


  • Make the pastry: In a large bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add the water, mixing until the dough just comes together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

  • Make the filling: In a small saucepan, combine the dates, water, honey, cinnamon, and cloves. Cook over low heat, stirring frequently, until the dates are softened and the mixture is smooth.

  • Roll out the pastry: Roll out the pastry on a lightly floured surface to a 1/8-inch thickness. Cut the pastry into squares or rectangles.

  • Fill the pastries: Place a spoonful of the date filling in the center of each pastry square. Fold the pastry over the filling and crimp the edges to seal.

  • Fry the pastries: Heat about 1 inch of oil in a deep fryer or large pot to 350°F (175°C). Fry the pastries in batches for 2-3 minutes per side, or until golden brown.

  • Coat with sugar or cinnamon: Roll the fried pastries in sugar or cinnamon.
