Ingredients

 

  • 2 cups (250 grams) all-purpose flour
  • 1 cup (250 grams) yellow cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (250 ml) buttermilk
  • 1/4 cup (60 ml) melted butter
  • 1 egg

Method


  • Preheat the skillet: Heat a cast-iron skillet or griddle over medium heat.

  • Combine dry ingredients: In a large bowl, whisk together the flour, cornmeal, baking powder, baking soda, and salt.

  • Combine wet ingredients: In a separate bowl, whisk together the buttermilk, melted butter, and egg.

  • Combine wet and dry ingredients: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.

  • Drop batter onto skillet or bake in oven: Drop spoonfuls of the batter onto the hot skillet.

  • Cook until golden brown: Cook for 15-20 minutes per side, or until golden brown and cooked through.

  • Serve: Serve warm
