Korvapuusti Recipe

Korvapuusti, meaning “ear slap” is a traditional Finnish cinnamon roll that’s loved for its sweet, buttery flavour and flaky texture. It’s a popular treat enjoyed by people of all ages.

Yields: 12-15 korvapuusti  Prep time:  30 minutes  Rising time: 1 hour  Baking time:  10-12 minutes

Ingredients

 

For the dough:

  • 1 cup (250 ml) warm milk
  • 1 tablespoon active dry yeast
  • 1/4 cup (50 grams) sugar
  • 1/4 cup (50 ml) melted butter
  • 1 large egg
  • 3 cups (375 grams) all-purpose flour
  • 1/2 teaspoon salt

For the filling:

  • 1/2 cup (125 grams) butter, softened
  • 1/2 cup (125 grams) brown sugar
  • 1 teaspoon ground cinnamon

For the glaze:

  • 1/4 cup (60 ml) powdered sugar
  • 1 tablespoon milk

Method

  • Make the dough: In a small bowl, combine the warm milk, yeast, and sugar. Let stand for 5 minutes, or until the yeast is foamy.

  • In a large bowl, whisk together the melted butter, egg, flour, and salt.

  • Add the yeast mixture to the dry ingredients and stir until a dough forms.

  • Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.

  • Place the dough in a greased bowl, cover with plastic wrap, and let rise in a warm place for about 1 hour, or until doubled in size.

  • Make the filling: In a small bowl, combine the butter, brown sugar, and cinnamon.
  • Roll out the dough: Roll out the dough on a lightly floured surface to a 12-inch rectangle.

  • Spread the filling: Spread the butter-sugar-cinnamon mixture evenly over the dough.

  • Roll up the dough: Roll up the dough tightly from the long side.

  • Cut into slices: Cut the rolled dough into 12-15 slices.

  • Place on a baking sheet: Place the slices on a baking sheet lined with parchment paper.

  • Let rise: Let the slices rise for another 15-20 minutes.

  • Bake: Bake in a preheated oven at 375°F (190°C) for 10-12 minutes, or until golden brown.

  • Make the glaze: In a small bowl, whisk together the powdered sugar and milk until smooth.

  • Glaze the korvapuusti: Drizzle the glaze over the cooled korvapuusti.
