A Cambodian Noodle Soup Delight

Kuy Teav is a popular Cambodian noodle soup that’s often enjoyed for breakfast or lunch. It’s a light and tasty dish that’s perfect for any time of day.

Yields:  4 servings  Prep time:  30 minutes  Cook time:  1-2 hours

Ingredients


For the broth:

  • 1 pound (500 grams) pork bones
  • 1 onion, quartered
  • 2 cloves garlic, minced
  • 1 inch piece of ginger, sliced
  • 1 teaspoon white peppercorns
  • 1 teaspoon salt

For the noodles and toppings:

  • 8 ounces (225 grams) rice noodles
  • 1/2 pound (250 grams) pork belly, thinly sliced
  • 1/2 pound (250 grams) pork liver, thinly sliced
  • 1/4 cup (60 ml) bean sprouts
  • 1/4 cup (60 ml) chopped green onions
  • 1/4 cup (60 ml) chopped cilantro
  • 1 lime, cut into wedges
  • Fish sauce, to taste

 

Method


  • Make the broth: In a large pot, combine the pork bones, onion, garlic, ginger, white peppercorns, and salt. Add enough water to cover the bones. Bring to a boil, then reduce heat and simmer for 1-2 hours, or until the broth is rich and tasty.

  • Cook the noodles: Cook the rice noodles according to package instructions. Drain and rinse with cold water.

  • Cook the pork: In a separate pot, blanch the pork belly and liver for a few minutes. Remove and set aside.

  • Assemble the soup: Divide the cooked noodles among bowls. Add the pork belly and liver to each bowl. Ladle the hot broth over the noodles and toppings.

  • Garnish: Garnish with bean sprouts, green onions, cilantro, and a squeeze of lime juice. Serve immediately with fish sauce on the side.
