Laulau is a traditional Hawaiian dish that involves wrapping protein, such as pork or fish, in taro leaves and then steaming it. This method of cooking results in tender and flavourful meat.

 

 

Yields:  4-6 servings  Prep time:  30 minutes  Cook time:  3-4 hours

Ingredients

  • 1 pound (500 grams) pork butt, cut into 1-inch cubes
  • 1 pound (500 grams) salt fish, soaked and desalted
  • Taro leaves
  • Ti leaves

Method

 

  • Prepare the ingredients: Cut the pork butt into 1-inch cubes. Rinse the salt fish thoroughly to remove excess salt.

  • Wrap the ingredients: Place a layer of taro leaves on a work surface. Add a portion of pork and salt fish to the center. Wrap the taro leaves tightly around the ingredients, securing with a piece of ti leaf or kitchen twine.

  • Steam the Laulau: Place the wrapped Laulau in a steamer basket and steam for 3-4 hours, or until the pork is tender and the taro leaves are soft.

  • Serve: Serve the Laulau hot with rice and a side of poi.
