Lomo Saltado Fries are a popular Peruvian street food that combines the flavours of classic Lomo Saltado (stir-fried beef with onions and tomatoes) with crispy French fries.

Ingredients

 

  • 1 pound (500 grams) flank steak, thinly sliced against the grain
  • 1 large onion, sliced
  • 2 large tomatoes, peeled, seeded, and sliced
  • 2 cloves garlic, minced
  • 1/4 cup (60 ml) soy sauce
  • 1 tablespoon white vinegar
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground aji amarillo (or paprika)
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons olive oil
  • 1 pound (500 grams) frozen French fries
  • Salt and pepper to taste
  • Chopped cilantro, for garnish

Method

 

  • Marinate the beef: In a bowl, combine the steak, soy sauce, vinegar, garlic, cumin, aji amarillo, red pepper flakes, salt, and pepper. Marinate for at least 30 minutes.

  • Cook the fries: Cook the frozen French fries according to package directions.

  • Cook the steak: Heat 1 tablespoon of olive oil in a large skillet or wok over high heat. Add the marinated steak and cook until browned and slightly charred. Remove from the skillet and set aside.

  • Sauté the vegetables: In the same skillet, heat the remaining olive oil. Add the onion and cook until softened. Add the tomatoes and cook until they begin to break down.

  • Combine: Return the steak to the skillet and cook for a few more minutes, until the flavours are well combined.

  • Serve: Serve the Lomo Saltado over a bed of hot French fries. Garnish with chopped cilantro.
