Mirchi Vada Recipe

Mirchi vada is a popular Indian snack made with spicy chili peppers stuffed with a mixture of gram flour, potatoes, and spices. It’s deep-fried until golden brown and crispy.


Yields:  12-15 vadas  Prep time:  30 minutes  Cooking time:  10-12 minutes

Ingredients

 

For the filling:

  • 2 large chili peppers, seeded and finely chopped
  • 1 medium potato, grated
  • 1/4 cup (60 ml) gram flour
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup (60 ml) water

For the coating:

  • 1 cup (125 grams) gram flour
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Water, as needed

Method

 

  • Make the filling: In a large bowl, combine the chili peppers, grated potato, gram flour, cumin, coriander, red chili powder, turmeric powder, salt, and pepper. Mix well until thoroughly combined. Add water as needed to form a thick paste.

  • Stuff the chili peppers: Stuff the chili peppers with the paste.

  • Make the coating: In a small bowl, combine the gram flour, red chili powder, turmeric powder, salt, and pepper. Add water gradually until you form a thick batter.

  • Coat the stuffed chili peppers: Coat the stuffed chili peppers in the batter.

  • Fry the vadas: Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the vadas until golden brown and crispy.

  • Drain and serve: Drain the vadas on paper towels and serve immediately.
