Okonomiyaki: Savoury Japanese Pancake

 

Okonomiyaki Japanese street food Recipe

Okonomiyaki is a savory Japanese pancake that translates to “cook as you like it.” It’s a versatile dish where you can customize the ingredients to your liking.

 

Yields:  2 servings  Prep time:  20 minutes  Cook time:  15-20 minutes

Ingredients

  • 1 cup (125g) all-purpose flour
  • 1/2 cup (120ml) dashi stock (or water)
  • 1 large egg
  • 1 cup (250g) finely shredded cabbage
  • 1/4 cup (60ml) chopped green onions
  • 2 tablespoons tenkasu (tempura flakes) – optional
  • 1 tablespoon bonito flakes (optional)
  • 2 tablespoons vegetable oil
  • 1/4 cup (60ml) okonomiyaki sauce
  • Japanese mayonnaise
  • Aonori (dried seaweed flakes)

 

Method


  • Make the Batter: In a bowl, whisk together flour, dashi stock, and egg until smooth.

  • Combine Ingredients: Add shredded cabbage, green onions, tenkasu (if using), and bonito flakes (if using) to the batter. Mix gently until combined.

  • Cook the Okonomiyaki: Heat vegetable oil in a large skillet over medium heat. Pour the batter into the skillet and spread it evenly to form a pancake.

  • Cook and Flip: Cook for 5-7 minutes, or until the bottom is golden brown. Carefully flip the pancake and cook for another 5-7 minutes, or until the other side is golden brown and cooked through.

  • Serve: Transfer the cooked Okonomiyaki to a plate. Drizzle with okonomiyaki sauce and Japanese mayonnaise. Garnish with aonori and bonito flakes.

 

Tips:

  • You can add other ingredients to your Okonomiyaki, such as pork belly, shrimp, squid, or vegetables like mushrooms and bell peppers.

  • For extra flavour, cook the Okonomiyaki on a hot plate.

  • Okonomiyaki sauce can be purchased at most Asian grocery stores, or you can make your own with a combination of Worcestershire sauce, ketchup and soy sauce.
