Ingredients


For the rice:

  • 1 cup (250 ml) white rice
  • 2 cups (500 ml) water
  • 1/2 teaspoon salt


For the macaroni salad:

  • 1 cup (250 grams) cooked macaroni
  • 1/2 cup (125 ml) mayonnaise
  • 1/4 cup (60 ml) sugar
  • 1 tablespoon white vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup (60 ml) chopped celery
  • 1/4 cup (60 ml) chopped onion
  • 1/4 cup (60 ml) chopped green onion


For the grilled chicken:

  • 1 pound (500 grams) boneless, skinless chicken breasts
  • 1/4 cup (60 ml) soy sauce
  • 2 tablespoons honey
  • 1 tablespoon grated ginger
  • 1 clove garlic, minced

 

Method

  • Cook the rice: Rinse the rice and cook it according to package directions.

  • Make the macaroni salad: In a large bowl, combine the cooked macaroni, mayonnaise, sugar, vinegar, salt, and pepper. Mix well. Add the celery, onion, and green onion and mix again.

  • Prepare the chicken: In a bowl, combine the chicken, soy sauce, honey, ginger, and garlic. Marinate for at least 30 minutes.

  • Grill the chicken: Grill the marinated chicken until cooked through and slightly charred.

  • Assemble the plate lunch: Serve the rice, macaroni salad, and grilled chicken on a plate.
