Tave dheu recipe

Tave Dheu, meaning “baked in the earth,” is a traditional Albanian dish that’s cooked in a clay pot over an open fire or grill. It’s a hearty and tasty meal that’s perfect for a cold day.

Yields:  4-6 servings  Prep time:  30 minutes  Cooking time:  1-2 hours

Ingredients


For the filling:

  • 1 pound (500 grams) lamb or beef, cut into small pieces
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup (250 ml) chicken broth


For the topping:

  • 1 cup (125 grams) grated Parmesan cheese
  • 1/4 cup (60 ml) breadcrumbs

 

Method


  • Make the filling: In a large bowl, combine the meat, onion, garlic, cumin, paprika, coriander, salt, and pepper.

  • Assemble the dish: Place the meat mixture in a clay pot. Pour the chicken broth over the meat.

  • Cover and bake: Cover the pot with a lid or aluminum foil. Place the pot on a grill or over an open fire. Cook for 1-2 hours, or until the meat is tender and the sauce has thickened.

  • Top with cheese and breadcrumbs: Sprinkle the top of the dish with Parmesan cheese and breadcrumbs.

  • Continue cooking: Cook for an additional 10-15 minutes, or until the cheese is melted and bubbly.
