A Maltese Baked Pasta Dish

Timpana maltese street food recipe

Timpana is a traditional Maltese baked pasta dish that features layers of pasta, ricotta cheese, béchamel sauce, and vegetables. It’s a hearty and tasty meal that’s perfect for a special occasion.

Ingredients

 

For the Pasta Filling:
  • 2 cups (200g) penne or macaroni pasta
  • 2 tablespoons (30ml) olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 pound (500g) ground beef or pork
  • 1 can (14oz/400g) crushed tomatoes
  • 1 tablespoon (15g) tomato paste
  • 1 teaspoon (5g) sugar
  • 1 teaspoon (5g) dried oregano
  • 1 teaspoon (5g) dried basil
  • Salt and pepper to taste
  • 3 large eggs, lightly beaten
  • 1/2 cup (50g) grated Parmesan cheese
  • 1/2 cup (125g) ricotta cheese (optional)
  • 1/4 cup (60ml) milk
  • 1 tablespoon (15g) butter (for greasing the dish)

For the Pastry Crust:
  • 2 sheets ready-made puff pastry (about 500g)
  • 1 egg, beaten (for brushing)

Method


Step 1: Cook the Pasta
  1. Boil a large pot of salted water and cook the pasta until it’s al dente, following the package instructions (around 8-10 minutes).

  2. Drain the pasta and set aside to cool.

Step 2: Make the Meat Sauce
  1. In a large skillet, heat the olive oil over medium heat.

  2. Add the chopped onion and garlic, cooking until softened (about 5 minutes).

  3. Stir in the ground beef or pork and cook until browned (about 7-8 minutes).

  4. Add the crushed tomatoes, tomato paste, sugar, oregano, basil, salt, and pepper.

  5. Simmer the sauce for 20 minutes, stirring occasionally, until it thickens.

Step 3: Combine the Ingredients
  1. In a large bowl, mix the cooked pasta with the meat sauce.

  2. Stir in the beaten eggs, Parmesan cheese, ricotta (if using), and milk.

  3. Grease a 9×13-inch (22x33cm) baking dish with butter.

  4. Pour the pasta mixture into the dish, smoothing it out evenly.

Step 4: Prepare the Pastry
  1. Preheat the oven to 350°F (175°C).

  2. Roll out one sheet of puff pastry and use it to line the bottom and sides of the baking dish, allowing some overhang.

  3. Spoon the pasta mixture onto the pastry.

Step 5: Top and Bake
  1. Roll out the second sheet of puff pastry and place it on top of the filling.

  2. Trim any excess pastry and crimp the edges to seal the pie.

  3. Brush the top of the pastry with the beaten egg to give it a golden finish.

  4. Use a fork to poke a few small holes in the top for steam to escape.

Step 6: Bake
  1. Bake in the preheated oven for 45-50 minutes, or until the pastry is golden brown and crisp.

  2. Allow the Timpana to cool for 10-15 minutes before slicing and serving.
