Chargrilled oysters are a beloved dish from New Orleans, featuring fresh oysters grilled in their shells with a rich and buttery garlic sauce, often topped with cheese and herbs.

 

Yields:  2 dozen oysters (4-6 servings as an appetizer)  Prep time: 15 minutes  Cook time:  10-15 minutes

Ingredients

 

  • 2 dozen fresh oysters in the shell, scrubbed clean

  • 1 cup (225g) unsalted butter, softened

  • 6-8 cloves garlic, minced

  • 1/4 cup (60ml) grated Parmesan cheese

  • 2 tablespoons Worcestershire sauce

  • 1 tablespoon fresh lemon juice

  • 1 tablespoon chopped fresh parsley

  • 1/2 teaspoon Creole seasoning (such as Tony Chachere’s)

  • Freshly ground black pepper to taste

  • Hot sauce (optional)

 

Method

 

  • Prepare the Grill: Preheat your grill to medium-high heat.

  • Make the Garlic Butter Sauce: In a medium bowl, combine the softened butter, minced garlic, Parmesan cheese, Worcestershire sauce, lemon juice, chopped parsley, Creole seasoning, and black pepper. Mix well until fully incorporated. Taste and adjust seasoning as needed; add a dash of hot sauce if desired.

  • Grill the Oysters: Arrange the scrubbed oysters on the hot grill, cup-side down, for about 2-3 minutes until they start to open slightly.

  • Add the Sauce: Once the oysters begin to open, use tongs to carefully turn them cup-side up, being careful not to spill any of the oyster liquor. Spoon a generous amount of the garlic butter sauce over each oyster, allowing it to melt down into the shell.

  • Continue Grilling: Continue grilling for another 5-10 minutes, or until the butter is bubbling, the edges of the oysters are slightly browned, and the oysters are plump and cooked through. The exact time will depend on the heat of your grill and the size of the oysters. Watch them closely to prevent overcooking.

  • Serve Immediately: Using tongs and a heat-resistant glove or towel, carefully remove the chargrilled oysters from the grill and arrange them on a serving platter. Serve immediately with crusty bread for soaking up the delicious garlic butter sauce and extra lemon wedges if desired.
