A Flaky Egyptian Pastry

Egyptian feteer street food recipe

Feteer is a popular Egyptian pastry made with layers of phyllo dough filled with a sweet cheese filling. It’s often enjoyed for breakfast or as a dessert.

Yields:  8-10 servings  Prep time:  30 minutes  Cook time:  25-30 minutes

Ingredients

 

For the phyllo dough:

  • 1 package (17.3 ounces/490 grams) phyllo dough, thawed
  • 1/2 cup (125 ml) melted butter


For the cheese filling:

  • 1 pound (500 grams) akkawi cheese, crumbled
  • 1/4 cup (60 ml) heavy cream
  • 1 teaspoon ground cardamom

For the syrup:

  • 1 cup (250 ml) sugar
  • 1 cup (250 ml) water
  • 1/4 cup (60 ml) lemon juice
  • 1 teaspoon rose water


Method

 

  • Prepare the cheese filling: In a bowl, combine the crumbled akkawi cheese, heavy cream, and cardamom. Mix well.

  • Assemble the feteer: Lay out a sheet of phyllo dough. Brush with melted butter. Repeat with 5-6 more sheets of phyllo pastry, brushing each layer with butter.

  • Add the filling: Spread the cheese filling over the phyllo pastry.

  • Roll the feteer: Starting from one end, roll the phyllo pastry tightly into a log.

  • Cut the feteer: Cut the log into 1-inch thick slices.

  • Bake the feteer: Arrange the feteer slices in a baking dish. Bake in a preheated oven at 375°F (190°C) for 25-30 minutes, or until golden brown.

  • Make the syrup: In a saucepan, combine the sugar, water, lemon juice, and rose water. Bring to a boil, then reduce heat and simmer for 5-10 minutes, or until the syrup thickens.

  • Soak the feteer: Pour the hot syrup over the baked feteer.

  • Serve: Serve warm or cold, garnished with pistachios or chopped nuts.
