Hawawshi is a popular Egyptian street food, consisting of a flatbread filled with spiced ground meat. It’s a hearty and delicious meal that’s perfect for any time of day.

Yields:  8-10 servings  Prep time:  30 minutes  Cook time:  20-25 minutes

Ingredients

 

For the dough:

  • 2 cups (250 grams) all-purpose flour
  • 1 teaspoon instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 cup (60 ml) olive oil
  • Warm water, as needed

For the filling:

  • 1 pound (500 grams) ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste

Method

  • Make the dough: In a large bowl, combine the flour, yeast, sugar, and salt. Add the olive oil and gradually add warm water, kneading until a soft dough forms. Cover and let rise in a warm place for 1 hour, or until doubled in size.

  • Prepare the filling: In a large skillet, cook the ground beef, onion, and garlic until the meat is browned and the onions are softened. Add the cumin, coriander, and cayenne pepper, and cook for an additional minute. Season with salt and pepper to taste.

  • Shape the Hawawshi: Roll out the dough into a thin rectangle. Divide the dough into 8-10 equal squares. Place a spoonful of the meat filling in the center of each square. Fold the dough over the filling and seal the edges.

  • Cook the Hawawshi: Heat a griddle or large skillet over medium heat. Cook the hawawshi on both sides until golden brown and the filling is heated through.

  • Serve: Serve the hot hawawshi with tahini sauce, hummus, or a side salad.
