Koshari Recipe

A Hearty Egyptian Dish

Yaroa Dominican Republic Street Food Recipe

Koshari is a popular Egyptian dish consisting of rice, macaroni, lentils, and chickpeas, topped with a spicy tomato sauce and crispy onions.

Yields:  4-6 servings  Prep time:  30 minutes  Cook time:  1-2 hours

Ingredients


For the rice and pasta:

  • 1 cup (250 ml) rice
  • 1 cup (250 ml) macaroni
  • 4 cups (1 liter) water
  • 1 teaspoon salt

For the lentil and chickpea mixture:

  • 1 cup (250 grams) dried lentils
  • 1 cup (250 grams) dried chickpeas
  • Water, as needed
  • 1 teaspoon salt

For the tomato sauce:

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon coriander seeds
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 1 can (15 ounces/425 grams) crushed tomatoes
  • Water, as needed
  • Salt to taste

For the topping:

  • 1/4 cup (60 ml) vegetable oil
  • 1/2 cup (125 grams) onion, thinly sliced
  • 1/4 teaspoon cumin seeds

 

Method


  • Cook the rice and pasta: In a large pot, combine the rice, macaroni, water, and salt. Bring to a boil, then reduce heat and simmer until the rice and pasta are cooked through. Drain.

  • Cook the lentils and chickpeas: Soak the lentils and chickpeas overnight. Drain and rinse. In a separate pot, combine the lentils, chickpeas, and enough water to cover. Bring to a boil, then reduce heat and simmer until tender. Drain.

  • Make the tomato sauce: In a large pot, heat oil and sauté the onion and garlic until fragrant. Add the tomato paste, cumin seeds, coriander seeds, cayenne pepper, and black pepper. Stir well. Add the crushed tomatoes and water. Bring to a boil, then reduce heat and simmer until the sauce thickens. Season with salt to taste.

  • Fry the onions: Heat oil in a small skillet over medium heat. Fry the sliced onions until golden brown and crispy.

  • Assemble the koshari: In a large bowl, combine the cooked rice, pasta, lentils, and chickpeas. Pour the tomato sauce over the mixture and toss to coat. Top with the fried onions.
