La Bandera, or “The Flag”, is a traditional Dominican meal consisting of three main components: rice, beans, and a protein, typically meat, chicken or fish.

Yields:  4-6 servings  Prep time:  30 minutes  Cook time:  1-2 hours (depending on the protein)

Ingredients


For the Rice:

  • 1 cup (250 ml) white rice
  • 2 cups (500 ml) water
  • 1/2 teaspoon salt


For the Beans:

  • 1 pound (500 grams) dried red kidney beans
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Water, as needed

For the Protein (optional):

  • 1 pound (500 grams) boneless, skinless chicken breasts or pork chops
  • 1 teaspoon adobo seasoning
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Method

 

For the Rice:

 

  1. Rinse the rice in cold water until the water runs clear.

  2. In a medium saucepan, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the water is absorbed.

  3. Fluff the rice with a fork and season with salt.

For the Beans:

  1. Soak the beans in water overnight.

  2. Drain the beans and place them in a large pot. Cover with water and bring to a boil. Reduce heat and simmer for 1-2 hours, or until the beans are tender.

  3. In a separate skillet, sauté the onion and garlic in olive oil until fragrant.

  4. Add the sautéed vegetables to the beans along with the oregano, cumin, salt, and pepper. Simmer for an additional 10-15 minutes.

For the Protein (optional):

  1. Season the chicken or pork with adobo seasoning and black pepper.
  2. Grill, bake, or fry the protein to your desired level of doneness.


To Serve: Plate the rice, beans, and protein together. Traditionally, La Bandera is accompanied by a side salad or avocado.
