Ramen: A Classic Japanese Comfort Food

Ramen is a popular style of Japanese street food featuring a savoury soy sauce-based broth. This recipe provides a basic foundation for you to customize with your favourite toppings

 

Yields:  4 servings  Prep time:  30 minutes  Cook time:  1-2 hours (broth) + 5 minutes (noodles)

Ingredients

 

  • For the Broth:


    • 1/2 pound (225g) pork bones (optional)
    • 1 onion, quartered
    • 2 cloves garlic, smashed
    • 1 inch ginger, sliced
    • 1 tablespoon soy sauce
    • 1 teaspoon mirin
    • 6 cups (1.5 liters) water


  • For the Ramen:

    • 4 servings ramen noodles
    • 4 slices cooked pork belly (chashu)
    • 4 soft-boiled eggs
    • 1/4 cup (60ml) green onions, thinly sliced
    • 2 tablespoons sesame seeds
    • Nori seaweed (optional)

Method

 

  1. Make the Broth (optional): If using pork bones, roast them in the oven at 400°F (200°C) for 30 minutes. In a large pot, combine roasted bones, onion, garlic, ginger, soy sauce, mirin, and water. Bring to a boil, then reduce heat and simmer for 1-2 hours. Strain the broth and discard the solids.

  2. Cook the Noodles: Cook the ramen noodles according to package directions. Drain and rinse with cold water.

  3. Assemble the Ramen: Divide the cooked noodles among four bowls. Ladle hot broth over the noodles. Top with chashu pork, soft-boiled eggs, green onions, sesame seeds, and nori seaweed (if using). 


Note: This is a basic recipe. You can customize it by adding other ingredients such as:

* Arame: A type of seaweed * Bamboo shoots: Canned or fresh * Menma: Bamboo shoots preserved in brine * Wakame: Seaweed
