Yakitori: Grilled Japanese Skewers

Yakitori is a popular Japanese street food consisting of grilled skewered meats and vegetables. This recipe focuses on classic chicken Yakitori.

Yields:  4 servings  Prep time:  30 minutes  Cook time:  10-12 minutes

Ingredients


  • 1 pound (450g) boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup (60ml) soy sauce
  • 2 tablespoons sake (or dry sherry)
  • 2 tablespoons mirin
  • 1 tablespoon sugar
  • 1 clove garlic, minced
  • 1/2 teaspoon grated ginger
  • 8-10 bamboo skewers, soaked in water for 30 minutes

 

 

Method


  • Marinate the Chicken: In a bowl, combine the chicken, soy sauce, sake, mirin, sugar, garlic, and ginger. Marinate for at least 30 minutes, or preferably for several hours in the refrigerator.

  • Thread the Skewers: Thread the chicken pieces onto the skewers.  

  • Grill the Yakitori: Grill the skewers over medium heat for 5-7 minutes per side, or until the chicken is cooked through and slightly charred.

  • Serve: Serve the hot yakitori immediately.
